    Bernard Tronche, owner of the Saint-Emilion Restaurant, first came to Texas in 1979 with college friends on a sightseeing trip. Bernard loved it so much that he separated from his friends and took a job at Calluaud's in Dallas, then considered Dallas' top restaurant. Here, he gained valuable experience working for Chef Guy Calluaud. In 1985, Bernard opened his own French restaurant in Fort Worth - Saint-Emilion. The name comes from the centuries old village of Saint-Emilion in southwestern France, near the town of Libourne where Bernard grew up. The cuisine is classic French with an influence from this region. Specialties include prime beef, duck, rabbit, lamb, veal and fresh seafood, and Saint-Emilion has one of the best wine cellars in Fort Worth.
